Personally, I just record one part at a time, so I get the maximum
number of voices. If I want to hear one part playing while I record
another part, I play back the best MIDI take and record it to audio. I
think I would only use mix mode live.
However ... why can't you record MIDI in mix mode, to get the
arrangement sounding right, even if some patches sound weak, and
afterwards filter different regions of the keyboard and different
channels to different tracks in Logic (I think there should be some way
to do this). Then when it comes time to record audio you can use
program mode. Of course it's different if you're playing live I suppose ...
